Heirloom Gazpacho

When the dog days of summer hits and there's an abundance of tomatoes, there's nothing quite like a spoonful of gazpacho - a chilled soup that's light, refreshing and perfect for a summer's day. This is one of our favorites that you can only find during the summer season when tomatoes are at their best. Enjoy!

Ingredients:

2 large heirloom tomatoes

2 lemon cucumbers (more tender and sweet flavor, but regular Persian cucumbers work well too)

1 gypsy pepper (or small bell peppers)

1 small red summer onion

3 cloves garlic

1 Tbsp chopped Italian parsley

2 Tbsp sherry vinaigrette

1 cup extra virgin olive oil

Sea salt and freshly ground pepper to taste

 

Directions:

  1. Rough chop the tomatoes, cucumbers, pepper and onion into smaller pieces.
  2. Put all ingredients in a blender and blend until smooth and frothy.
  3. Chill for at least 2 hours before serving.

Salt and pepper to taste after blending
